The Estate Cocktail | Signature Indonesian langoustine
Crafted with The Macallan Sherry Oak 12, this cocktail reveals velvety layers of dried fruit, oak and warm spice. Paired with our Indonesian-spiced langoustine, this opening course sets the tone with finesse and depth.
Sherry Wine Neat Serve | Otoro, white miso and Japanese citrus
A neat serve of Valdespino Sherry — crisp, golden and complex, with almond notes and a buttery palate. Served chilled, it beautifully complements the richness of otoro, lifted by bright miso and citrus.
Exceptional Oak Casks Alcoholfree | Seabass, white grape, Vin Jaune and verjus
Inspired by The Macallan’s oak legacy, this alcohol-free pairing brings structure and subtlety. Served with seabass, white grape, Vin Jaune and verjus, it delivers freshness and balance without compromise.
Curiously Small Stills Neat Serve | Duck ,albufeira, madeira and mushroom
Paired with The Macallan Sherry Oak 18, this neat serve unveils deep notes of ginger, cacao and date. The duck is succulent and refined, enriched by the sweetness of madeira and the umami of mushroom, creating a deeply layered and harmonious pairing.
